4 cups baby spinach
1 frozen banana
1 1⁄2 cups honeydew melon, cubed
1 cup ice (optional)

SPINACH AND BANANA SMOOTHIE
SERVES 2 TO 3 GLASSES
1 very ripe banana
1 small orange
1 small apple
2 1/2cups (75 g) baby spinach
1/2 in (1.5 cm) piece of fresh ginger
juice of 1 small lemon
1 tbsp. baobab powder (optional; from a health food store
or online)
1 tsp. moringa powder (optional; from a health food store or online)
1/2 tsp. linseed oil

METHOD
Peel and coarsely chop the banana and orange. Peel the apple, cut it into quarters, remove the core, and roughly chop it. In a food processor, combine all of the fruit chunks and the spinach.
Peel and finely grate the ginger and combine it with the lemon juice, baobab and moringa powders (if using), and linseed oil in a food processor. Blend the ingredients until smooth, then add 16fl oz. (500ml) water and mix briefly again. Pour into small bottles and chill for 1–2 hours. Alternatively, chill it in a vacuum flask and serve one portion at a time.
