MULTI-LAYERED AVOCADO TOAST

SERVES 2 TOASTS

  • 1 tbsp dairy-free butter
  • 113g (4oz) extra-firm tofu, drained
  • 1⁄4 tsp black salt
  • 1⁄4 tsp onion powder
  • Pinch of turmeric
  • 1 avocado
  • Pinch of ground black pepper
  • 1 tsp lime juice
  • 2 slices sprouted grain bread

    METHOD

    Heat the butter in a skillet over medium-high heat. Tofu should be crumbled into the skillet. Sprinkle with the salt, onion powder, and turmeric and cook for 4 minutes, stirring frequently, until the tofu is crumbled small.

    Mash the avocado with the pepper and lime juice in a small bowl.

    Bread should be toasted. Half of the prepared avocado should be spread on each piece of toast. On each piece of toast, place half of the prepared tofu. At an angle, cut the toasts in half.
