PROTEIN POWER GRILLED VEGGIE AND FRUIT SKEWERS
SERVES 4 PORTIONS
227g (8oz) extra-firm tofu, drained, and cut into 1-inch cubes
2 tbsp tamari
1 tbsp rice vinegar
1 tbsp maple syrup
1⁄4 tsp chili powder
1 large sweet potato, peeled and chopped into bite-size chunks
113g (4oz) cremini mushrooms
1 pineapple, chopped into chunks
1 red bell pepper, chopped into large pieces
1 yellow bell pepper, chopped into large pieces
Extra virgin olive oil, for grilling

METHOD
In a large mixing bowl, combine the tofu cubes. Combine the tamari, rice vinegar, maple syrup, and chili powder in a small bowl and pour over the tofu. Set aside for 30 minutes to marinate.
Cook the sweet potato chunks for 10 minutes, or until they are just tender.
Clean the mushrooms and remove the stem ends. If the mushrooms are large, cut them in half or thirds.
Tofu, sweet potato, pineapple, red and yellow bell peppers, and mushrooms should be skewered onto each skewer.
Brush the grill or grill pan with oil and heat it to medium- high. Grill skewered vegetables and fruit until grill marks appear. Flip and grill the other side.
